This 30 cm x 20 cm rectangular aluminium pizza screen has a perforated base that lets air circulate under the dough during oven baking. The base dries better and becomes crisper, while the 1 cm rim makes it easier to hold and to transfer from the oven to the worktop.

What is it for?

The 30 cm x 20 cm size suits individual rectangular pizzas and pizza sold by the slice. In a pizzeria or production workshop, the screen supports dough bases waiting to be baked: it goes in the fridge or freezer during mise en place, then straight into the oven.

Aluminium heats up quickly and spreads the heat over the whole surface, for even baking from one batch to the next. The 12 screens let you keep cycles going during the rush, and they go through the dishwasher after service.
