This oval baking case in white 45 g/m² greaseproof paper, pleated and treated to resist moisture, measures 10.5 cm x 4 cm x 2.5 cm. It lets bakery-patisseries bake, present and sell individual pieces in the same holder, with a clean release.

What is it for?

Sweet or savoury mini cakes, individual brioches, flans, clafoutis, small sandwich loaves, moelleux or seasonal specialities: the elongated shape suits portioned recipes. The greaseproof paper limits grease marks, and the white sets off glazes, seeds, fruit and toppings at the counter, for takeaway or on a caterer's tray.

In production, the fixed format makes it easier to line up on a tray and evens out weights from one batch to the next. The piece goes from preparation to baking and then to the display counter without transfer, which reduces handling and contact with the dough as well as the finished product.
