At Ø 35.56 cm, this round aluminium pizza screen combines a perforated base with a 0.4 cm rim. In the oven, hot air passes under the dough: residual moisture decreases and the crust gains crispness, without sogginess.

What is it for?

A good conductor, aluminium heats up quickly and gives heat back efficiently: baking stays even from one pizza to the next. The screen is used for direct baking as well as for final colouring or finishing to order, then preserves the crispness of the base until plating, and the pizza comes away from it easily.

With 12 screens, some stay in the oven while the others are used for plating: production keeps going without interruption during the rush. Pizzerias, sandwich shops, snacking corners, caterers and food trucks fit it easily into their usual sequence, from shaping to topping, then from baking to dispatch.
